I'm thinking of trying that but looks like it needs bacon.

Also it would interrupt putting pickled jalapeños in mashed potatoes to make them incredibly delicious.

At christmas dinner, I mashed potato with parsnip, butter, and a tiny tiny bit of garlic. Rolled it into walnut-sized balls and roasted it for about 15 minutes.

While mashing, if you add one raw egg with the milk per 3 pounds of potatoes you increase the
fluffiness by a factor of 5.

1) Buy a potato ricer, get better mashed potatoes.
2) Get potatoes that are good for mashing. Maris piper is reliable for mash.
3) Don't add too much other stuff. If you want to serve mash, it should be mash. Butter or milk is fine to make it smooth. Cream if you want to be posh and make it more luxury (pointless if you just want to serve it as a side).
4) If a recipe calls for more flavourings than mashed potato chances are you're missing the point. It's a simple thing, and it should absorb the sauces in the rest of the meal, or compliment them. It shouldn't obliterate them. Jalapeno mash is an abomination.

I'm probably addicted. I've gone through an entire jar of jalapeño slices since Christmas dinner. :(

I'm thinking of switching to wasabi or something.

I stopped by this thread twice and restrained myself from saying it, but I can no longer abide.

Mashed potatoes are for enfeebled, wimpy derelicts. Y'all aren't tough enough. Y'all can't handle the light brown skin---RACISTS!!

For real mashed potatoes, a cube (1/4 pount) of butter or margarine, a few tablespoons of milk and mash, mash, MASH quickly, by hand, enough to kill the lumps, but not enough to create moosh.

Chorizo Mashed Potatoes?

Gotta be good if it's got chorizo right?

5 whole New Potatoes, Medium Sized
2 Tablespoons Olive Oil
1 whole Red Onion, Small
¼ pounds Deli-sliced Chorizo, Hard-cured
3 cloves Roasted Garlic
1 Tablespoon Butter
½ cups Milk
