For the record I don't hate Tarantino, I just don't regard him as one of the Greats as it were. His style is admirable but his dialogue blows and I tend to judge directors as wholes. His newer movies are crap though,sorry.
I think Kubrick is a classic choice and I agree he's up there. I've seen Lolita I don't know how many times and find it a delightfully layered watch. So few directors are able to produce such a polished product, not to mention a great psychoanalytical conversation piece. Kubrick manages to maintain an undercurrent throughout the very innocent scenery. Showing without showing requires genius and the best do this with the lightest touch.
Other directors who I feel are praise worthy for creating consistently brilliant works of film are:
Roman Polanski(My personal vote for BFD)
Francis-Ford Coppola
David Lynch

There are a few odd directors that I've noted in the past who have made some quite good movies but don't hold a candle to the bodies of work of the above four.

For me direction is all about balance, congruity and consistency. Make my quality movie heavy on the subtlety and light on the levity(just enough to keep it fresh). I prefer to walk away from a film with a new perspective, not a handful of catchy quotables.
