I assume you are asking how they convert the power in the bike to power at the blades?

Its basically a series of pistons to rotational motion not dissimilar to your car.

Piston Action (legs on bike) -> Rotational Action (cog on bike) -> Piston Action (tension cables between bike and blades) -> Rotational Action (blades).

You cant apply the rotational force directly since you have four individual blades to power. I imagine they have some kind of system where you apply force to two blades on your right leg downstroke and the other two on your left leg downstroke.

Looks real simple to setup. "Wanna go for a pedal-copter ride? Gimme about 2 hours..., and then I'll be on my way!"
