Olympics..What is the difference between sports and games?

We're having a bit of an argument at work as to what sports aren't actually sports in the Olympics.
I don't think that any sport when you're sitting on a horse is a sport, nor sitting in a sailing boat.
Archery isn't much of a sport either.
Nor Curling in the winter olympics
Please list other shit sports in the olympics that you would like to see dropped

It's simple, really.
There are three basic categories, Sport, Games, and Performance.
Sport is something that is determined by empirical means. So, Archery is absolutely a sport. Because there aren't judges whose opinion can alter the outcome. Like racing, etc.
Then there are games, like basketball, where the refs can, by human error, determine the outcome of the match.
Then there are performances, like diving, gymnastics, etc. Where it is all about judges determining the winner.

So if Formula1 is a sport and Poker is a game - why aren't these included in the olympics?

Does Las Vegas allow betting? If so, it is a sport/game; if not it is a performance.
