Question

When your inbox (or sent folder for that matter) fills up, what happens? Does the newest message just push the oldest message out or can you not receive messages until you delete some of them?

you can set your box so it doesn't delete any current messages until you create more space in your inbox by deleting or moving other messages. there is an entire thread devoted to the powers of the inbox, had you only searched, that explains what and how your inbox can do different things:
