The way I see it, political correctness does not mean "being afraid to discuss things because they aren't fashionable". Political correctness only requires you to take other people in consideration, use language which is inclusive to all groups of people, and make a conscious effort to not use terms that are bigoted against a group of people or used in a derogatory manner against one.
And yes, it does mean that the set of acceptable words to use changes with time, and yes, words don't have any inherent meaning, but that's pretty much irrelevant - when a word begins to be used in a hateful, derogatory manner, is it really such a huge thing to ask to refrain from using that word? It's the least you can do to show some solidarity to a group that is facing some real discrimination.
Political correctness does not mean not being able to say f*ck, or not being able to talk about difficult issues, as far as I'm concerned. It just means you have to not be a total douche when you do it. It also means that if you happen to say something that is offensive and bigoted without realizing it, you don't get all defensive and ornery when someone points it out - you can simply say "thanks, I did not see it that way, now I know better to avoid that kind of phrasing".

I think it's extremely probable that a lot of people answer what they think they "should" answer in these kinds of polls - gender roles are pretty deep ingrained in our culture.

Not discriminatory as such, just that you have some unfounded assumptions about sexes and sexuality due to social conditioning. We all do, it's what we do to get rid of them is what counts.
