'Gip is trying...not quite there yet, but he is still trying.

A little more will power and cut down my caloric intake and portion size. I have gone mostly vegetarian, while still consuming dairy and food that has eggs as a binder (such as bread and pasta), but I am really limiting myself on that type of food, usually just for a Sunday evening meal.

I love Eggplant Parmesan, and would eat it everyday if I could!

I highly recommend it! If you like more spice, i usually squirt some Sriracha Sauce into it, I also include a package of fried Soyrizo.

DaGip, veggie-ism is looming high on my horizon at the moment, as my daughte has just defected to that tribe.
How veggie are you? (I can see that you're not vegan, or one of the even more extreme branches).
How bout fish?
Anyhow, for the foodie veggie, my main recommendation would be Pat Chapman's Vegetarian Curry Bible. I have every Pat Chapman book I've been able to track down, (he's not a veggie himself). This is one of his two veggie books, and it contains some awesome recipes.

I am staying away from all lifeforms that have a central nervous system, fish included. Eggs I have been eating, but only in the fashion I mentioned above (as binder agents in breads and pastas). If I decide to eliminate eggs as well, I will have to look for some type of egg substitute for a binding agent.

Veganism is a bit more extreme, and my own vegetarianism isn't political in nature, but health oriented. I never grew up in a vegetarian family, and it was tough to become a vegetarian when everyone in your family is always tempting you with meat. They don't realize that they are doing it (or maybe they do?), but lately I have found the temptations easing. So I think that I am succeeding.

I will look that particular vegie book up, as I love curry. Indian food rocks!
