I may very well be misunderstanding your question, but nothing you do changes the chances of getting a good roll of the dice.

The probability of conquering a country depends entirely (and exclusively) on how many armies you have on your attacking country and how many defending armies your opponent has on the target country.

When you attack you throw one die less than the number of armies you have in the attacking country up to a maximum of three dice. The defender throws one die for each army in the defending country up to a maximum of two dice.

The most favorable attack situation is for the attacker to throw three dice and defender to throw one die.

In this case, one can expect the probable outcome to be:

Defender losing one army: 66%
Attacker losing one army: 34%

The most favorable defense situation is for the attacker to throw one die and the defender to throw two dice.

In this case, one can expect the probable outcome to be:

Defender losing one army: 11%
Attacker losing one army: 89%

The number of the attacker's countries which are adjacent to the defender's country does not affect the odds one way or the other.

Obviously, if you control several of the countries surrounding a defender, assuming you have sufficient armies in each of those countries, then you can launch multiple attacks from each of those countries increasing the likelihood of ultimately conquering that target country. But if you consider each attack in isolation then the number of borders covered by your attacking armies is irrelevant to the probability of success or failure for each single attack.
