So, am I understanding this correctly -- to get the gold for this, you have to defeat a single player on 60 different maps? And that I have to do that with five separate opponents?

No, on 60 different maps you have to defeat at least 5 different opponents per map.
So it doesn't matter who you defeat on other maps.
