Would something like that be legally binding? Would it hold up well in court?

 Next lets assume that the "contract" would hold up in court (which I agree with some of the others that it would only hang you).  If the baby is as developed as you said, a punch hard enough to kill the fetus stands a very good chance of detaching her placenta.  If not treated soon after that would cause her to bleed to death internally, thus killing them both.
