Depends what you mean by a veggie, but I have a vegan friend who complains that it's hard to get your 5 portions of fruit and veg in per day.
Her diet seems to be almost entirely carb-based - bread, rice, potatoes, sometimes with some sauces.
There's various faux-meat and faux-dairly procucts made from soy, rice, etc too.
But a more serious question is nutrition. You can only give into any kid (vegiie or not) so far.
A good ploy to get them eating better is to show them how to cook or make stuff. My daughter for instance would never eat guacamole ("Ew! It's green and mushy!") until we made it together. Now she loves it.
